It’s that time of year again, the smell of new books, and the cries of “what’s for lunch?” Chia Bia can help mums everywhere by giving you a healthy option for your lunch box that tastes good! Chia Bia chia seeds can be a great addition to any lunch box.

Chia Chocolate Energy Bars –
Ingredients:
1 ½ cups dates, pitted
1 tblsp Water
1/3 cup of dried cranberries
½ cup Chia bia whole chia seeds
1/3 cup cocoa powder
1/3 cup unsweetened coconut flakes
1 tsp vanilla extract
¼ tsp sea salt
¼ cup dark chocolate, chopped
1/3 cup oats
1 cup walnut pieces
Method:
- In a food processor, puree the dates with the water to form a thick paste
- Add the cranberries to the food processor and pulse again
- Add the chia seeds, cocoa powder, coconut, vanilla extract and salt to the food processor. Pulse all the ingredients together until they are well mixed
- Transfer the mixture to a large bowl
- Mix in the dark chocolate, oats and walnuts
- Line an 8inch pan with wax paper, with enough to wrap around the mixture
- Place the mixture into the pan and press it down into all four corners
- When the mixture is evenly spread in the pan, cover with the remaining wax paper
- Place the pan in the refrigerator and leave overnight
- The next morning, unwrap the mixture and cut into even bars
- Wrap the bars individually. Store in an airtight container in the fridge
